Se decojesc, se taie in felii potrivite si se pun la fiert. Lasati-le sa clocoteasca o jumatate de ora. Se taie ardeiul in rondele subtiri, se pune peste rosii si se lasa sa clocoteasca 10 minute. Adaugati verdeata tocata, sarea si zaharul. Mai lasati la fiert inca 10 minute. Separat, incalziti bine ½ litru de ulei. Zarzavatul fierbinte se pune in borcane mici, insa nu le umpleti cu varf (lasati un spatiu gol de 3-4 cm). Cand clocoteste se ia de pe foc si se pune imediat doua linguri de miere de albine.&lt;br /&gt;Se lasa sa se raceasca putin. Se scot castravetii din borcan si apoi se aseaza din nou de aceasta data punand intre ei catei de usturoi, rondele de morcovi si boabe de piper. hreanul se curata de coaja si se taie felii pe lung, apoi se pun feliile printre castraveti.&lt;br /&gt;Se acopera cu otetul fierbinte dar cu mare grija sa nu se sparga borcanul. Se lasa curatate in vase mari, iar cand se pregateste zacusca, ardeii se taie felii subtiri, iar vinetele se rup sau se toaca marunt. Se procedeaza ca si la zacusca de ghebe: se toaca ceapa, care se fierbe o ora intr-un litru de ulei. Se adauga ardeii, apoi sucul de rosii fiert separat si vinetele tocate.&lt;br /&gt;Zacusca de vinete se fierbe incet, in vase cu peretii dubli, impreuna cu boabe de piper si foi de dafin. Cand toate ingredientele sunt puse se potriveste cu sare. Se adauga usturoi dupa gust.&lt;br /&gt;Zacusca se fierbe cel putin 3 ore, iar cand este gata, nu trebuie sa mai aiba deloc suc. restul de varza se taie fin. Orezul, separat de impuritati, se spala in mai multe ape si, apoi, se fierbe pe jumatate in apa cu sare (poate fi folosit si nefiert). Ceapa se curata si se spala; 100 de grame se taie marunt. Rosile proaspete, curatate si spalate se taie in sferturi. Carnea se taie in bucati si se toaca prin masina, impreuna cu 150g ceapa. Pasta de tomate se dilueaza cu putina apa.&lt;br /&gt;Carnea tocata se amesteca bine cu sarea, piperul macinat, orezul si putina apa rece (100 ml) Pasta obtinuta se portioneaza in mod egal, se aseaza pe foile de varza dulce carnea, apoi, se ruleaza; capetele ruloului se introduc in interior. Intr-un vas de fonta se aseaza pe fund o bucata de sorici afumata, un strat subtire de varza tocata si, apoi, sarmalele, una langa alta. Peste sarmale se aseaza un al doilea strat de varza, apoi din nou sarmale si ultimul strat va fi de varza care se presara cu cimbru. Ceapa taiata marunt (100g) se inabusa in ulei cu 100 ml apa. Se adauga boia de ardei dulce, piper boabe, pasta de toamte si se fierb 5-10 minute. Sosul obtinut se toarna peste sarmale, completandu-l cu apa calda. Sramalele se fierb la foc moderat pe plita sau la cuptor, timp de 80-90 de minute. Bati albusurile spuma cu zaharul pana se intaresc. Freci galbenusurile cu uleiul si le adaugi peste albusuri. Amesteci incet, adaugi esenta si faina turnata "in ploaie". Ungi cu ulei o tava, o tapetezi cu hartie de copt pe care o ungi cu  margarina, torni aluatul si dai tava la cuptor pentru 20 de minute, la foc iute. Scoti rulada din cuptor, o desprinzi de pe hartia de copt cat timp este calda. Rastorni blatul tot pe o hartie de copt si il lasi sa se raceasca putin cat timp faci crema.&lt;br /&gt;&lt;ul&gt;&lt;li&gt;&lt;span style="font-weight: bold;"&gt;Mode de preparare crema:&lt;/span&gt;&lt;/li&gt;&lt;/ul&gt;Freci margarina cu zaharul si cacaua pana ce crema devine spumoasa si omogena. Ungi blatul cu 3/4 din crema de cacao si rulezi strans, cu grija, ca sa nu se rupa marginile cu ajutorul hartiei de copt. Impartiti aluatul in 3 si din 2/3 intinzi o foaie subtire pe care o asezi intr-o forma de tort unsa cu unt. Adaugi 8 galbenusuri, smantana, zaharul vanilat, esenta de vanilie, stafidele si amesteci foarte bine toata compozitia. O torni peste aluatul din tava, o ungi cu galbenusul batut si dai la cuptor pentru 30 de minute. Maioneza se face dintr-un galbenus fiert si unul nefiert, o lingura de mustar si 10 linguri de ulei. Se scot fileurile de la peste si se taie bucati potrivite. Strecori pastele fierte si le calesti 3-5 minute in margarina. Se taie castravetii murati in rondele subtiri si pastrezi 3-4 linguri de saramura. Se curata ceapa si se taie marunt. Se amesteca castravetii, maioneza, ceapa, mararul, taiat marunt si saramura de castraveti. Se sareaza si se pipereaza dupa gust. Se toarna amestecul peste macaroane si se lasa o ora sa patrunda. Adaugati kaizerul taiatmarunt si ciupercile taiate. Le lasati timp de 10 minute, sa se caleasca impreuna. In alta tigaie puneti o lingura de margarina sa se topeasca si adaugati ficatul bine curatat si taiat bucati mai mici. Dupa ce s-a rumenit bine pe toate partile adaugati ficatul peste ceapa, turnati vinul si lasatifiarba la foc domol pentru 15 minute. La sfarsit presari patrunjelul peste.
